Lamb Neck Stew Recipe

Lamb neck is hands-down one of my favorite cuts of meat. When it’s cooked just right, it falls off the bone, tender and full of flavor. Honestly, I even love it cold the next day! This stew is hearty, flavorful, and perfect for any day you’re craving some good comfort food. Here’s how I make it.

Ingredients

  • 2 lamb necks, sliced into 1–1.5 inch thick pieces
  • 3–4 whole onions
  • 2 teaspoons crushed garlic
  • 2 tablespoons Worcestershire sauce spice (like Flippen Lekker spice)
  • 20ml Worcestershire sauce
  • 1/4 cup Safari white vinegar
  • 500g baby potatoes, halved
  • 500g baby carrots
  • 500g button mushrooms
  • 1 liter water

Instructions

  1. Prepare the base: In a large pot, add the lamb neck slices, crushed garlic, and whole onions. Pour in about 1 liter of water—just enough to submerge most of the lamb neck pieces. Bring it to a boil over high heat.
  2. Add seasonings: Once boiling, add the Worcestershire sauce spice, Safari white vinegar, and Worcestershire sauce. Stir to combine, reduce the heat to low, and let it simmer for about 1.5 hours. The lamb neck should cook until it’s soft and tender.
  3. Add the vegetables: After 1.5 hours, add the baby potatoes and baby carrots. Stir gently and let them cook for another 15–20 minutes until they’re just tender.
  4. Add the mushrooms: Add the button mushrooms and let the stew cook for an additional 10 minutes. Stir occasionally and taste-test the broth.
  5. Adjust seasoning: Just before serving, taste the stew and adjust the flavor if needed. Add a bit more Worcestershire sauce spice or salt if desired.
  6. Serve: Dish up the stew over rice and enjoy! Don’t forget to make enough for leftovers—it’s just as good (if not better) the next day.

Tips for Perfect Lamb Neck Stew

  • Cooking time: The key to perfect lamb neck is cooking it low and slow to ensure it becomes tender and falls off the bone.
  • Customizable veggies: Feel free to add or swap vegetables like parsnips, celery, or sweet potatoes for a twist.
  • Thicker broth: If you prefer a thicker stew, mix a teaspoon of cornstarch with water and stir it in during the last 10 minutes of cooking.
