Ingredients
- 2 lamb necks, sliced into 1–1.5 inch thick pieces
- 3–4 whole onions
- 2 teaspoons crushed garlic
- 2 tablespoons Worcestershire sauce spice (like Flippen Lekker spice)
- 20ml Worcestershire sauce
- 1/4 cup Safari white vinegar
- 500g baby potatoes, halved
- 500g baby carrots
- 500g button mushrooms
- 1 liter water
Instructions
- Prepare the base: In a large pot, add the lamb neck slices, crushed garlic, and whole onions. Pour in about 1 liter of water—just enough to submerge most of the lamb neck pieces. Bring it to a boil over high heat.
- Add seasonings: Once boiling, add the Worcestershire sauce spice, Safari white vinegar, and Worcestershire sauce. Stir to combine, reduce the heat to low, and let it simmer for about 1.5 hours. The lamb neck should cook until it’s soft and tender.
- Add the vegetables: After 1.5 hours, add the baby potatoes and baby carrots. Stir gently and let them cook for another 15–20 minutes until they’re just tender.
- Add the mushrooms: Add the button mushrooms and let the stew cook for an additional 10 minutes. Stir occasionally and taste-test the broth.
- Adjust seasoning: Just before serving, taste the stew and adjust the flavor if needed. Add a bit more Worcestershire sauce spice or salt if desired.
- Serve: Dish up the stew over rice and enjoy! Don’t forget to make enough for leftovers—it’s just as good (if not better) the next day.
